The recipe is super simple to make and is the perfect warming tummy-filler for the colder months.

Simply caramelise the cauliflower in the oven and then simmer it in a saucepan with the flavoursome goodness of onion and garlic. The result is a winter warmer the whole family will fall in love with and demand again and again and again.

Makes 6 Grip Cups

Ingredients 

  • 1 head cauliflower 
  • 2 tbsp olive oil
  • 1 small brown onion, diced 
  • 3 cloves garlic, diced
  • 1 1/2 L (6 cups) vegetable stock
  • salt and pepper to taste (not recommended for babies)

Method

Preheat oven at 180 C and line a baking tray with parchment paper.

Cut the cauliflower into florets, spread evenly on baking try, and drizzle with olive oil. Place in oven and bake for 15-20 minutes or until brown and caramelized. Remove from oven and set aside.

In a large saucepan, heat the olive oil over a medium heat.

Add onions and saute for 3-5 minutes until soft and translucent.

Add garlic and stir for a further two minutes.

Add vegetable stock and roasted cauliflower florets and allow to simmer for about 20 minutes to allow flavours to combine.

Transfer the soup to a blender and blitz until completely smooth. Season and enjoy in your favourite Grip Cup.
